Zuurkool recept (Sauerkraut recipe)

Zuurkool met rookworst is a traditional Dutch dish made with potatoes, sauerkraut (white cabbage) and smoked sausage. A great winter warmer and tastes even better the next day… if you can wait that long! 😉

Ingredients

  • Potatoes (Maris Piper or similar are best)
  • Jar / packet of Zuurkool (if you’re in England, you can probably only get a jar, if in the Netherlands there will be packets in the supermarket near the potatoes)
  • Rookworst / Smoked sausage
  • Butter
  • Milk
  • Salt & Pepper
  • Optional extras: apple, bacon, cured meat or even raisins!

Method

1. Boil potatoes with pinch of salt and pepper until soft and ready for mashing. Rinse the zurkool if needed (read: if it’s too sour for your taste.)

2. Simmer zuurkool for 10-15 minutes in its own juices. (Boil the apple – if using.)

3. Mash the potatoes with butter and milk until nice and creamy.

4. Add the zuurkool (and apple) and season. Zuurkool is already quite salty, so go easy on the salt.

5. Warm the smoked sausage as per the instructions (and bacon if you’re using that too!)

6. Serve.

  1. So Dutch of you! I can behind the stamppot/hutspot thing but I haven’t yet fully embraced cabbage – although this does inspire me to give it another go! Have you tried ‘hete bliksem’? Red cabbage with apple – delicious even for the non-cabbage loving!

  2. Dank je! Do! I think it’s yummy, even if it is a bit sour (I just compensate by rinsing it first and/or adding extra potatoes to get the balance right) 🙂 Ooh, no I haven’t – it looks tasty. I’ll give it a try, bedankt voor de tip!

  3. We always cook the zuurkool on top of the potatoes. Add some “zuurkool spek” (bacon) into the zuurkool. When the potatoes are cooked, remove the bacon, drain the cooking water and add the butter and milk before mashing everything together. Personally I always add some ground nutmeg into the mash. Serve the zuurkool with the rookworst and sliced bacon. My personal favorit: mix a big dollop of sambal through the zuurkool. But then, I mix the sambal with everything, lol!

    By the way, ever tried hachee? Beef stew with onions and cloves, combined with mashed potatoes. Sometimes combined with red cabbage.
